Pecan Pie
There is nothing that we like better in the summertime, in the South, than a good, ole pecan pie. What makes this recipe so good is the texture of the pecans. They have to be chopped really, really good....none of those whole pecans in my pie. This is my Mama's recipe that she has had since the 60's. It is very easy and really good. It makes two, so you can take one somewhere and leave the other one at home to enjoy. For more recipes, visit Foodie Friday over at Designs by Gollum. These are the ingredients:
1 stick butter
1 cup karo syrup
1 cup sugar
1/2 t. salt
3 eggs, beaten
2 cups chopped pecans
Mix together first 4 ingredients and cook until dissolved. Beat the eggs until they foam. Mix together all of the ingredients and pour into 2 unbaked pie shells. Bake at 325 degrees for 40 min.

ReplyDeleteI've only made it with whole pecans....now I'll have to try your version, from a true Southern Lady that knows her way around the kitchen! I've had a pecan pie with chocolate chips and a splash of bourbon too...pretty wicked....in a good way!
